WHERE MEDITERRANEAN ELEGANCE MEETS THE SOUL OF PANTELLERIA.
In the heart of the Salamanca district, a few steps from the Retiro Park, is PANTE, the Italian restaurant that brings with it the soul of Pantelleria, the most mysterious and authentic island of the Mediterranean.
Known as the black pearl, this volcanic island emerges between Sicily and Africa as an enclave of history, nature and culture.
Its name, of Arabic origin – Bentel Ryah, daughter of the wind – speaks of its free and wild spirit.
PANTE is a tribute to this unique place. Here, Italian cuisine is expressed with honesty, emotion and beauty. Each dish is an invitation to travel through flavors born from the best raw materials, mostly imported directly from Italy and from carefully selected local producers. From Pantelleria capers to Zibibbo grapes, from Passito sweet wine to Bacio Pantesco lemon ricotta, everything has a story to tell.
Designed by the renowned Milanese designer Antonio Facco, the space reflects the elegance of contemporary Italian design: soft lines, enveloping arches, neutral colors and noble materials that dialogue with the warmth of the service and the strength of the Sicilian recipes. Because at PANTE, the experience begins when you walk through the door: an intimate atmosphere, a lively menu that changes with the seasons, and a wine cellar that offers the best of the old and new world, with more than 100 references selected with criteria and passion.
INGREDIENTS
The essence begins at the origin
At PANTE, we believe that the quality of a dish comes from respect for its ingredients. That is why we carefully select raw materials of excellence, many of them brought directly from Italy, and others from local producers with whom we share values of sustainability, freshness and authenticity.
The menu is inspired by the most honest Italian cuisine, with roots deeply linked to the island of Pantelleria, where the flavors of the sea, the volcanic earth and the Arab influence intertwine in harmony. Pantelleria capers, wild oregano, Zibibbo wine or grape honey are just a few examples of the gastronomic treasure we bring to the table.
Our cuisine respects tradition, but looks at it with contemporary eyes. It is not a matter of reinventing what is already perfect, but of enhancing the Italian recipe book with aesthetic sensibility and modern techniques. The result is an authentic, delicate, deeply Mediterranean experience.
At PANTE, every ingredient tells a story. And every story is transformed into flavor.
GASTONOMIC PROPOSAL
A living chart that evolves with the seasons
PANTE’s cuisine is structured around two essential pillars: respect for seasonality and the exaltation of raw products. Our proposal revolves around dishes that change according to the season, in constant dialogue with what the land and the sea offer at their best.
We also have a refined Crudo Bar, where fish, seafood and vegetables are presented in their purest form, highlighting the nobility of the raw material without artifice, as dictated by the southern Italian tradition.
To these are added the great classics of the Italian recipe book, elegantly reinterpreted, always with ingredients of the highest quality and precise execution. Because at PANTE, the goal is not only to cook, but to reveal the excellence of authentic Italian cuisine through every detail.
Tradition, seasonality and product: the three cornerstones of a proposal that invites you to savor Italy from its roots.

PANTELLERIA
The island that gave birth to PANTE
It all begins in Pantelleria, a volcanic jewel located between Sicily and Tunisia. Seventy miles from southern Europe and 39 from North Africa, this unique island – known as the black pearl of the Mediterranean –is an enclave of contrasts: sheer cliffs, black lava rock, a deep blue sea, and an Arab heritage that still breathes in its architecture and flavors.
Pantelleria is not an easy island: it is rough, wild, beautiful and difficult. But it is precisely in this duality that its magic lies. It is a land of extremes, of passion, of authenticity. An island that is loved or feared, but never leaves you indifferent.
Its capers with designation of origin, its famous Passito di Pantelleria wine – made from Zibibbo grapes, one of the oldest in the world – and its fertile soil, rich in minerals, make it a paradise for intense ingredients, full of character.
At PANTE Madrid, we pay homage to this unique island not only through its name, but by bringing directly its most emblematic flavors: capers, oregano, grape honey, and other products that define its gastronomic identity. Each one is a bridge between Madrid and Pantelleria, between tradition and modernity, between land and sea.
Pantelleria is the soul of PANTE.
And whoever crosses our doors also crosses the threshold of this legendary island.
